Le P'tit Suisse - bistro : a bistronomic cuisine composed of fresh products that you can enjoy with real pleasure, inspired and revisited, the menu is excellent. Depending on the moment, you can choose from: mozzarella buratina, tomato and basil tartar, pig's ear tartar, sheep's milk, capers... Cod and haddock brandade with a heart of sucrine vinaigrette, grilled prawns and farmhouse pig and lime and arugula risotto... Following the fish auction, the fish enchants the plates, but all year round we recommend the fabulous grilled hake for two from Saint-Jean. For dessert, maras des bois and raspberries, Basque cake and ewe's milk ice cream. The place is a must in Saint-Jean-de-Luz, either as an "aperitif/tapas" or just for a drink with friends. Le Suisse - restaurant: seafood is obviously in the limelight and the more than seductive platters, to be drawn from the shucked stand. On the plates, the chef proposes an elaborate cuisine, based on excellent products. Chipirons sautéed in garlic and parsley with chilli and coriander, piquillos with cod and ewe's chips, clams, octopus ceviche and salmon marinated in lime, chipirons, bird tongues in ink, à la carte or according to the day's suggestions, we can only salute the quality of this cuisine of character. Meat lovers will be delighted by the grilled pork belly au jus à l'Irouléguy or the exceptional Goya beef ribs with apple sauce... Here again, it is particularly successful around a brigade able to handle the blows of stuffing with professionalism and a staff at the height of the place.
