LE BAUME DE BOUTEVILLE
Baume de Bouteville is almost unique in France. It's an artisanal balsamic condiment aged for 3, 6 and 10 years in oak barrels containing regional brandy. It is made in October at harvest time from the ripest bunches of grapes. Characteristics: milder, lighter and less acidic than vinegar. Its sweet-and-sour aroma makes it ideal for seasoning, reduction and deglazing. It can also be used to enhance a dish or dessert. It is excellent with oysters and shellfish, revealing their flavor. It is also used in cocktails. The production site can be visited by appointment by e-mail or telephone.
