The cuisine on offer is anchored in the seasons, authentic and modern: pan-fried foie gras, cream of celery, grilled eryngii, forest meat juice, then poached cod with beetroot, combava zest, cream of purple carrots, yuzu white butter. We finish with a pear/figue tartlet with chocolate chips.
