From now on, Joffrey no longer needs to respond to this demand, as after four years of research, he has created a beautiful range of flavoured oysters. Of course, there are those with lemon, but also with shallot, ginger and pepper, all of which are linked to natural flavours. Above all, the process is also natural since it is the oyster - immersed for several hours in flavoured tanks - that filters the water and takes on its taste. The result is surprising and will undoubtedly seduce those who want to taste oysters differently. Joffrey Dubault, who has one foot in Marennes and the other in Dolus d'Oléron, now sells his production all over the world. Enough to make the Marennes-Oléron label known far beyond our borders.
