Established since 1983 in the former cooperative dairy, this family business matures cheeses from its farm and dairy suppliers by hand. This know-how was passed on to Jean-Noël Lavergne by his in-laws in Clussais-la-Pommeraie. The speciality of the cheese dairy is the fontadam, a hand-moulded cheese made from a mixture of goat and cow's milk; and also the mothais sur feuille fermier, a goat's cheese matured on chestnut leaves, or the cabri, the cinder goat, the cinder log, the cowherd... A wide range.
