DOMAINE COIFFARD
This is an exceptional Limousin meat! A bright red beef, so tender that it melts in your mouth. It is in Availles-Limouzine, in the South of Vienne, that David and Philippe Coiffard raise their cows and castrated males up to 4 years old. It is the latter, thanks to their marbled meat and fattier than normal, which make the reputation of the address. Labelled Gand Cru and certified organic in 2020, the domain controls its production from A to Z, from feeding to direct sale, including breeding, slaughtering in Confolens and cutting. Entrecote, ribeye, rib of beef, steak, pavé, sausages, pot-au-feu, bourguignon, will delight the whole family.
