Sous-chef at several Michelin-starred restaurants, Paul Martin has turned his attention to Japanese cuisine, much to our delight. It's in Biard that he has set down his chopsticks to offer us a menu of original, superbly prepared sushi and maki. In his restaurant, inspired by an Izakaya, he offers homemade dishes to share, combining a technique acquired in top restaurants with his love of Japanese culture. A daily menu is offered, halfway between the two cultures: a delight of flavors that extends to the desserts.
