His great-grandfather, Marius, was a goat cheese producer in Indre. When he decided to open a cheese shop on Bourbon Street, next to his tea and coffee shop, Pierre-Laurent Joly didn't have to look long for a name. It was obvious. At Marius, behind the large windows, soft, pressed, blue-veined, bloomy or washed rind, there is no shortage of cheeses.
