The ancient grape varieties that once made up the wines of Saint-Pourçain are grown on the hillside overlooking the château.
Managed by an association that works to revalorize old varieties of vines once produced in the region. After the phylloxera, the winegrowers replanted resistant varieties. This is how some of the grape varieties found in the conservatory were abandoned. It maintains the memory of the old methods of cultivation and has a place of exchange in one of the outbuildings of the castle. The blending of ten old white grape varieties gives a wine with a unique character.
