Truffles in abundance! Since 2013, Balme has been combining Provençal truffles with Basque gastronomy. Founded in Biarritz, Maison Balme, already present in several towns, combines a restaurant with a grocery store selling fresh and dried produce, where truffles take pride of place. On the plate, freshly prepared dishes include the famous œufs mimosa and the iconic coquillettes de tonton. Balme's dishes are regressive, gourmet and tasty; simple recipes sublimated by truffles. An amusing idea is the grater you can add to your dish, the cost of which depends on the price of the truffle in the store. In the evening, tapas and Sunday brunch.
