He fell into it as a child. By the age of 16, Florent Barré was already working at the Crèmerie des Halles. Behind his beard and beret, Florent is all smiles. He knows the market and its customers by heart, and loves to please them. His aim: to help people discover the great taste of raw-milk cheese. The stall is a real eye-catcher with its farmhouse products, matured by Christian Janier, Meilleur Ouvrier de France in Lyon. The house specialty is goat's cheese, which he fetches directly from local producers. On Saturday mornings, there's a flurry of activity in front of the beautiful wooden stall, with cheeses by the slice or beautiful platters for the aperitif.
