If olive oil is not the main activity of Christian Gaudemard, which also grows chickpeas, lentils, spelt, lavender and hybrid, it looks after the 200 olive trees in the family domain. His oil, which he realized at the Moulin de Bonaventure, is an assemblage of the two varieties in ripe fruity.
