Back in the days when olives were crushed by millstones driven by donkeys or mules, when the olive paste obtained was then placed in scourtins, a sort of large flat beret, and then compressed in order to harvest the precious nectar... Thanks to this enthusiast who has restored this mill, which probably dates from the 15th century (the last one left in France), you can not only make a very instructive visit but also taste a quality AOP Haute-Provence oil.
