L'ESPELETTE
Resolutely devoted to sharing, this address with its Côte d'Azur and Basque identity displays two versions in one place. At lunchtime, she greets her customers with slate suggestions inspired by seasonal products that change every three weeks. In the evening, wines by the glass to be picked from among the hundred or so references, individual or shared dishes and gourmet snacks set the festive and epicurean tone of gourmet events that are sometimes shared in front of a good rugby match broadcast on the big screen. The establishment is a family affair: Brice Pannetier took over the restaurant that her cousin had run for more than six years. If the market cuisine, of Basque inspiration, reveals simple and traditional flavours, the chef, Xavier Millien, is Corsican. The result is a sunny and local menu made up of fresh produce, which can be enjoyed on the few tables on the terrace or in an intimate, warm and colourful space that affirms its spirit as a gourmet bistro.
