Julien Rostan, the owner of the property, comes from a long line of olive trees installed in the village of Gilette. Its olive grove has 600 trees of the cailletier variety spread over 2,5 ha and two plots: one at the entrance to the village, the other at the top. The advantage? The power to lead two different types of cultures simultaneously: rational agriculture on the first (interventions with mineral fertilizers based on leaf analyses), the second in organic farming. After the harvest in the manual gaulage, from January to March, when the fruit hésitent between revival and black, Julien Rostan goes to the cooperative mill of Gilette to make it a oil to ripe fruity.
