For Alain Pons, a Catalan from Perpignan, preparing meat is an art! Best apprentice in France in 1993 and then a butchery teacher, he opened his shop in Grasse at the end of 2007 and immediately obtained the "Label rouge limousin". The same requirement for its catering activity: everything is homemade. He transforms and makes the Catalan specialities he loves so much: black pudding (boutifare), chorizo (soubressade), fine sausages (whips)... He also offers to local authorities and institutions the making of giant paellas (up to 3,000 guests) and continues to transmit his know-how to his students.Treasurer of the Syndicat de la boucherie, Alain Pons supports promotional actions with the general public (taste week, local fairs) and occasionally collaborates with great chefs such as Mr Chibois.
