LE MAQUIS
Good address for Mediterranean dishes prepared by chef Jean-Charles Césari
This beautiful table with the Corsican accents is set in the heart of a typical alley of the old town of Nice in two spaces combining decoration in the air of time and conviviality, all in an intimate atmosphere. At the head of this charming address, the dynamic and creative chef Jean-Charles Césari and his team, all as friendly as experienced! The cuisine is expressed here through Mediterranean dishes marked with perfumes and products from the Island of Beauty. The entries are inventive and tastier. Pissaladière and rockets are recommended; leeks, mimolette eggs and copeau chips; poached egg, Parmesan emulsion; beef cromeschis and barigoules artichokes. The map presents a wide choice that will satisfy wellness, greedy and palate: almost calf, gnocchis on bed of spinach shoots; cod back and cabbage purée; risotto encre ink, safranée emulsion; fregola pasta sarda roasted in the oven, sparkling olives and candied tomatoes. Note that the products offered evolve over the seasons. On the desserts chocolate beat, we succumb to XXL chocolate or, baba in Rum revisited (candied fruits, light cream savarin, touch of orange to orange and yuzu zest), with caramel, vanilla vanilla caramel salty butter or even fine apple pie. The wine cellar shows about 160 references on which Antoine Filippi, the cousin and associate of Jean-Charles Césari, watches; special mention of Sartène white wine and red wine Nicolas Mariotti Bindi of Oletta. The staff were friendly and helpful. An excellent address!
