Good address for a home-made cooking by the chef Eric Trochon.
This is an excellent restaurant run by Aurèle Gasperoni from Nice. It has to be said that this young, talented chef has had quite a career: training at the Institut Paul Bocuse, followed by enriching experiences at Le Doyen*** in Paris, L'Auberge Basque*, Charles Semeria in Beaulieu-sur-Mer, then working alongside France's best craftsman, chef Eric Trochon. Attached to his hometown, Aurèle decided to settle in Nice and open his own restaurant, a place where he can now share his cuisine, the result of a skilful blend of local and international influences. Everything is homemade, using market produce: pan-fried foie gras or perfect egg, sweet potato and passion fruit mousse; zucchini fritters and citrus condiment; Andalusian-style tomato gazpacho; roasted entrecote and pommes grenailles, mixed baby greens, Bordelaise sauce... If the plates are generous, the welcome is just as perfect, as are the copious, gourmet desserts! A brilliant address where rigor and savoir-faire combine to perfection culinary techniques.
