In this small intimate room, the stars continue to shine. The Tourteau brothers invite you to travel to the land of flavors. Playing a score with 4 hands measured to perfection and nourished by their childhood in Guadeloupe, they dare with accuracy melodies of flavors to offer an original cuisine. The 2 menus offered sublimate local products and regional specialties through audacious agreements from elsewhere. The sommelier recommends delicious wines chosen with care. A beautiful decor completes this exploration. Exceptional.

Everything was delicious, creative, and visually perfect. Kudos to the chef.
Unfortunately, food is not the *only* part of the equation, service is another. Things started off poorly when they did not have sommelier on staff so for someone who does not know much about wines but knows what they want to taste, this was a bummer. Speaking of staff, there was only one to speak of. And he did not seem to be fully trained yet, not knowing what was he serving, or anything about the menu. The chef(?) sorry I tried to compare his image to the photos and could not make a definitive match, but I believe he was. He was amazing and knowledgeable, but the service was not the strong suit of the night.
We had the 9 course meal without a pairing and clocked in at an astonishing 4.5 hours. That clocks in at half an hour per dish(?!). I am perfectly fine with a 5 hour meal, but we'd be talking about a 15+ course meal here. Pacing is such an important part of dining, you dont want long periods of time without anything coming out. We spent most of the night staring at an empty table. No recommendations on wines to drink or anything, just empty glasses and table. What could have been a great experience, turned out to make me crying tears of boredom towards the end.
I dont understand how can a 2-starred restaurant be so poorly staffed and trained, so please I hope they can fix this issue because the food *is* that good.
