Restaurant with traditional and medieval cuisine of the chef

"Caponnière" is originally a term associated with fortifications, a protected path imagined by Vauban. The restaurant invites you to discover the delicious cuisine of chef Bruno Desclaux. The terrace, set in an alleyway of the fortress, and the cosy dining room are illuminated by the adorable Martine, who presents us with a menu of homemade dishes focusing on local and medieval dishes. Delicious pittance with terrine au génépi, medieval marmite or Briançonnaise, and specialties from our mountains. The chef's signature Gâteau de voyage Vauban is a must.

Spécialités régionales délicieuses, et cuisine fait maison. Les produits sont bien cuisinés, c'est typique et très bon. Une certaine cuisine à l'ancienne, avec de bons produits, et un excellent rapport qualité prix. Le service est tout en douceur et sympathique. Une belle adresse de qualité.

Un accueil très sympathique de la part du personnel avec une attention agréable.
Les mets sont savoureux avec un rapport qualité-prix correct.
Le décor original.
Mais cet établissement fait parti du mal français avec le patron qui est seul avec un serveur pour une salle complète : bilan une attente démesurée qui nous laisse une appréciation moyenne : dommage!!

L'acceuil de la patronne n'est pas très agréable au vu de l'affluence je pense qu'elle s'en fiche. Sanitaires sans surveillance du coup au lavabo de l'eau en abondance au sol.Pour les toilettes, je passe sur les détails. Dommage car le repas était très bon.Attention que deux tickets restaurant acceptés par personne.
