Restaurant with traditional and medieval cuisine of the chef
"Caponnière" is originally a term associated with fortifications, a protected path imagined by Vauban. The restaurant invites you to discover the delicious cuisine of chef Bruno Desclaux. The terrace, set in an alleyway of the fortress, and the cosy dining room are illuminated by the adorable Martine, who presents us with a menu of homemade dishes focusing on local and medieval dishes. Delicious pittance with terrine au génépi, medieval marmite or Briançonnaise, and specialties from our mountains. The chef's signature Gâteau de voyage Vauban is a must.
