Johan works exclusively with local produce, and his creative menus are renewed every weekend. Beef tartar with pesto, hake fillet, chicken supreme, fish méli-mélo, veal declination, cod cheesecake with vegetables, pork filet mignon with chorizo... Pauline creates pretty desserts, such as chocolate caramel tulip, and gives strawberries pride of place in a crème brûlée or pistachio cookie.
