In this part of the Hautes-Alpes region, the young chef, who has worked with some of the world's top Michelin-starred chefs, showcases local produce in his highly personal gastronomic cuisine. You're guaranteed to fall in love with his dishes, which combine the flavors of yesteryear with modern-day harmonies: Arctic char and sweetbreads, morel mushrooms and asparagus tips, wild hogweed foam or a rack and fillet of farm-raised red label lamb cooked at low temperature and rolled in juniper-scented butter...
