LE CHAZAL
Restaurant offering a personal gastronomic cuisine with the chef's local products
The chef at Le Chazal may have changed - it's now Fabien Ferdinand behind the stoves - but what hasn't changed is the magnificent mountain setting surrounding this address, located some fifteen kilometers from Briançon in the Serre-Chevalier valley. In this part of the Hautes-Alpes region, the young chef, who has worked with some of the world's top Michelin-starred chefs, showcases local produce in his highly personal gastronomic cuisine. You're guaranteed to fall in love with his dishes, which combine the flavors of yesteryear with modern-day harmonies: Arctic char and sweetbreads, morel mushrooms and asparagus tips, wild hogweed foam or a rack and fillet of farm-raised red label lamb cooked at low temperature and rolled in juniper-scented butter... Cellar in the same gourmet spirit. An address to keep an eye on.

Malheureusement nous sommes tombés ce soir là à côté d’une table de 7 ou 8 personnes , très bruyantes , qui se pensaient sans doute seules dans le restaurant , ce qui nous a empêchés de converser calmement et de profiter d’un moment de détente .
