Recently visiting the south of France, Randy Siles Leandro, head of Costa Rica and founder of the Academy of Gastronomy in his country, had the opportunity to discover the wonderful products that the Var department has in store for us. Of course, the great chef has fallen under the spell of the Domaine de Majastre in Bauduen and the restaurant la Truffe in Aups, two essential tables where truffles are in the spotlight. He was able to meet two of his French colleagues and discuss many gastronomic topics. An exciting encounter uniting different cultures and techniques, Just before arriving in France, Randy was in Spain where he was able to cook six dishes for the "Condenast" event at Castillo de Maceda (Galicia). To each country a different memory, for the Var it is undoubtedly the delicious truffles of the Verdon and the warm welcome of Morgan Barra and Sébastien Gaillard that it will remember!
