This chef is Benjamin Collombat. A few days ago, he awarded him his Michelin star for his work with the nursing staff at the San Salvadour Hospital in Hyères. A generous initiative to thank these women and men on the front line to fight Covid 19. Benjamin Collombat has prepared with his friends, a tempting menu: espuma coconut passion salmon tartar, followed by a farmhouse poultry supreme accompanied by a lime mashed potato, and a Liège coffee to finish with a bang. Le Petit Futé contacted the Chef to congratulate him, he confided in us his joy of having offered pleasure through gastronomy, but that it was not easy to cook for 250 to 300 people while respecting the gestures barriers. The result was up to the task and the staff was able to appreciate all the talent of a Chef with a big heart. A nice moment of sharing!
