Awarded two Toques at Le Gault & Millau in 2017 and 2018, Mas des Vignes, the restaurant of the superb Dolce Frégate Provence hotel, could not wait long for a new visit from Le Petit Futé! Facing the green golf course, in a calm and cosy atmosphere, Chef Guillaume Maurice's tasting menu offered us beautiful emotions, with refined and especially seasonal dishes. This disciple of Escoffier and fervent defender of local products, gets his supplies from the Ferme des Olivades, an AMAP located in Ollioules. The freshness and flavours feel it, and our taste buds are still quivering! We enjoyed this "Southwestern duck foie gras cooked at low temperature, with an insert of Manzana apple chutney, hazelnut crumble", and this "chicken egg scramble with sea urchin tongues and Périgord truffle stratum". As for dessert, we melted for "Bavaroise à la Verveine on its crumble, red fruit jelly, raspberry vervain sorbet and fresh red fruits"...
