The chef, Laurent Deconinck, has been in some fine houses (Gagnaire, Lucas Carton-Senderens...). In 2018, he was awarded a Michelin star. His dishes are created with a wine in mind. In the middle of the winter season, he concocts a menu around the black truffle and in autumn he works with the white truffle. Finally, as you can imagine, the wine list is a little marvel, with 800 to 900 references whose sommelier will advise you on the choice to match your plate. L'Oustalet also offers a few elegant rooms.
