Jean-Anthelme Brillat-Savarin (1755-1826), a lawyer by profession, is best known as a gastronome, author of La Physiologie du goût, a treatise on culinary science. A representative of the Third Estate at the Estates General, he was mayor of Belley in 1793. After an enforced exile in the United States, he returned to France, where he was appointed Conseiller à la Cour de cassation. The courtyard of his birthplace (arcades, tower and well date from the 15th century) is part of the tour of Belley's historic center.
