A chef who asserts his culinary identity by working with products from the Ain, Bugey and Bresse in particular, in his own personal dishes, without stopping to look elsewhere to mix flavors. The homemade croque-monsieur with foie gras and free-range chicken with Bugey blackcurrants to finish is brilliant. Exceptional cuisine and location.
