At the piano, the chef Rémi Chaize likes to work with Ardèche products. Every week the menu changes. For example: Romanesco cabbage bavaroise with dried pork loin in chiffonade, carrot ketchup, tapenade shortbread, then roasted farm chicken breast with quinoa sautéed with small vegetables, cardoon mousseline, rosemary chicken juice, then mature cheeses or farmhouse faisselle, and finally orange pudding with chocolate ganache and mango sorbet.
