At the helm, Sylvain Menaud has breathed new life into an old farmhouse overlooking the Tanargue, with a vegetable garden, orchard, chestnut grove and flock of sheep. Vegetables and lamb take pride of place at his farmhouse table. For example, with black rice with leaf broth/condiment of lemon confit and tarragon, chestnut and sage gnocchi, or rustic lamb axoa with garden vegetables.
