LE PIGEONNIER
The House has been a family farm for three generations, nestled on the foothills of the Cevennes, in the regional natural park of the mountains of Ardèche, where olive trees are surrounded by chestnut trees and vineyards. The olive grove, made up of 1 200 trees of white varieties of Payzac, rougette and noirette from the Ardèche but also aglandau and leccino, is situated in a landscape landscape, exposed south. Trees, aged 5 years to over 100 years, are grown in rational agriculture without irrigation. Four oils are produced at the mill of the area: The White of Payzac, a typical monovariétale oil of the cevenol trias. It is an oil with spring notes, green, herb-leaf and apple, pear and fruity green fruit. Other wines: an assembly of rougette (70%) and noirette (30%) of Ardèche with apple aromas, pear and a peppermint note with a slight bitterness; an assembly of aglandau (50%) and leccino (50%), an oil rather soft and fruity and a fruité black (assembly from olives that have undergone controlled fermentation before extraction). You will find them in the area where Jocelyn Vigouroux, the owner of the premises, also organises open days on the last weekend of April, educational visits and thematic walks "through vineyards and olive trees" during summer.
