In the kitchen, bent over the elaboration of his locally-flavored menus, Jean-François has, in his own words, inherited from his grandmother a passion for good taste and a strong attachment to the Ardèche. He carefully selects his produce from local growers, and sometimes picks his own herbs in the mountains. In the dining room, and at the reception desk, his wife Évelyne personifies mountain hospitality, and welcomes you with touching kindness.
