Jean started out as an independent organic winemaker, with his 1.5 hectares of Gamay, Chardonnay and Tressallier. He produced his very first vintage in 2021. A white micro-cuvée called Initial with the AOC's signature grape, tressallier, and a fruity, wood-free red called Frière. New vintages are in the pipeline.
