Ce marché aux fromages n'est pas seulement rue du Buis mais aussi place des Docks anciennement place de la Boucherie. En plus des incontournables caves d'affinage il avait également d'autres utilités telles que la fabrication des chars fleuris de la fête annuelle du quartier mais aussi, les machines à carder la laine et les artisans confectionneurs de matelas. C'était aussi un formidable espace de récréation pour les enfants du quartier.
