Impossible to separate Wälchli Dairy from the Saint-Nictaire which has been its specialty since the 1930s! It was Mr. Wälchli from Switzerland who specialized in the production and maturing of this cheese. Since then, the know-how has been passed on to his sons and grandsons. To titillate the taste buds of visitors, a film on the making of the Saint Nectarios and a tasting session are offered in season. This is an unmissable stage on the Auvergne Cheese Route! For those who love processed cheese in very cold weather, try the Wälchli fondue: of course at the Saint-Nictaire! In June 2019, Mr. Wälchli inaugurated his new maturing cellars.
