Ivorian cuisine, prepared by chef Hamed Traoré, for a fine dining experience in Saint-Étienne.
In a warm setting, chef Hamed Traoré introduces us to all the flavors of Côte d'Ivoire. The meal begins with a choice between turmeric bean acras with homemade spicy mayonnaise, and turnovers filled with beef colombo. Beef mafé, lamb soup, fish of the day: it's hard to choose between the dishes. Our favorite is certainly the chicken choukouya : a mountain of braised, stewed chicken pieces, covered in delicious spices. We devour them with our fingers, dipping them in two homemade sauces: the one made with ginger, bird peppers and West Indian peppers will delight thrill-seekers.
