In the heart of Cercié, L'Ecume Gourmande offers an air-conditioned dining room superbly decorated with rustic touches of exposed stone, a tribute to the terroir, and a splendid, transparent cellar containing some of the region's finest vintages. At the helm is the excellent Ghislain Varillon, a chef who has passed through the Institut Bocuse and other Michelin-starred establishments, and who offers us a cuisine full of mastery and creativity, using fresh, mostly regional produce.
