Restaurant with tripe still on the menu in Lyon.
In the affluent district of Ainay, at these prices and in these surroundings, we'd call it a "bourgeois bistro" rather than a popular bouchon. The fact remains that this address, created in 1928, was the haunt of one of Lyon's most famous "mères", Mère Abel. In an authentic setting that plunges us into another era, the menu perpetuates the tradition of Lyonnais specialties: pâté en croûte maison, andouillette with mustard sauce, Abel-style tripe, tête de veau with gribiche sauce, quenelle de brochet en gratin, gratin d'écrevisses and the unmissable poulet aux morilles à la crème. Perfect with green Chartreuse. Excellent wine list. A local institution.
