This is a rather special article for the Institut, as we know that we won't be featuring it in our next edition. The Institut, which was created in the heart of Lyon by Gérard Pélisson as the application restaurant for the Institut Paul Bocuse, has come under the flag of the Institut Lyfe, which is giving it a new direction under the impetus of multi-starred chef - we're talking 15 Michelin stars! - Yannick Alléno, who will open a restaurant called Pavyllon in late 2025. A concept already underway in Paris, a starred gastronomic counter where the great chefs of tomorrow will be trained. In the meantime, you can still take advantage of the Institut to discover the world of the great houses.

Nous étions dans une salle indépendante, au calme et tout s'est idéalement passé.
Je ne parle même pas de la cuisine digne du plus grand chef, agrémenté d'un gâteau préparé selon nos souhaits.
Service parfait, petites attentions mais avec une discrétion de bon aloi.
Dans la salle, les tables sont largement espacées et tout est fait pour pouvoir visionner l'environnement culinaire.
