Always keen to shake up traditional cuisine and give young people a chance to express their talents, the chef has created this "new chefs' scene". Juliette Tuzzolino's turn at this incubator for future gastronomic "aces" is to introduce us to her culinary universe. Trained at the finest restaurants, her short menu includes personal dishes such as "mimosa leeks from my childhood", as well as a surprising pressé of confit pork, celery and helianti, before a tarte Tatin 2.0.
