A short menu at lunchtime, and surprise formulas in the evening to discover combinations of flavors and textures inspired by nature. Perfect desserts and a growing wine list. The "surprise" menu structure was a bit daunting at first, but they did a great job and everything was very tasty. A lot of times you can walk away from fixed menus still slightly hungry, and that was not the case here. We did the 5-course with the wine pairing and everything was very generous.
All of the dishes were very creative, using ingredients I wouldn't have thought to use, but getting great flavor and balance in the dishes. I particularly enjoyed how each course gave a sample of the centerpiece in 2-to-3 different formats go really appreciate the flexibility of the food. On top of tasting great, everything was very aesthetically pleasing and well plated.
The team was very friendly and accommodating (both in reservation communications and during the meal). They clearly cared about us knowing what we were getting and learned the English for a few of the more niche ingredients and wine descriptors on the spot to be able to be able to clearly relay those bits.
Overall, this was one of the more memorable dining experiences over the course of an extended trip, and I cannot recommend this more!
