After making their culinary mark at the Château de Candie in Chambéry, where they were awarded a Michelin star, Boris and Cédric opened Restaurant 59 in Aix-les-Bains in 2010. Originally, the two brothers managed the establishment: Boris worked in the kitchen, while Cédric was in charge of service. In 2013, Cédric took over as chef d'orchestre. His cuisine is based on the use of fresh produce chosen for its quality. The restaurant offers beautiful presentations in a hushed, friendly atmosphere.
