Since 1955, Saint-Nectaire has been one of Auvergne's five AOCs, and is produced in a precise geographical area comprising 50 communes in the Puy-de-Dôme and 19 communes in the Cantal, including Marchastel. This pressed, uncooked cheese is circular in shape, with a bloomy rind and a melting, creamy texture. The farm has a modern building that respects animal welfare, a cheese dairy that meets health standards, and a storage tunnel for haymaking equipment and fodder.
