This typically Creole snack offers bokits made from breadfruit flour with a very low gluten content. Bokit is one of Guadeloupe's most popular specialties. It's a fried bun with a variety of fillings, such as chicken, ham and cheese... But there are also more local varieties: lambi, cod, Indian chicken with Bokaraïbes sauce (tandoori style)... Their bokits are light and low in fat despite frying, as breadfruit flour absorbs less oil. The flour is produced by a local flour mill.
