Here's a healthier alternative to bokit, with no frying and no fat. Banton is the brainchild of chef Charles Valétudie. It's a pizza dough topped with spices like turmeric, baked in the oven and garnished with ground beef, chicken, bacon, tuna or ham and cheese. The name of this sandwich is a nod to the olden days, when bread was called "banton". Savory crepes made with manioc flour are also on the menu. Charles and his wife Sabrina warmly welcome you to their sheltered, green terrace.
