After working in a Michelin-starred restaurant in Paris, Gil Malidor, a young chef from Martinique, chose the Depaz plantation to return to his homeland and offer a new take on Creole cuisine. The establishment is inspired by the seasons, and the menu is constantly evolving to offer authentic flavors. Its signature dishes are lambis agathes, little lambis balls stuffed inside! Other highlights include pluma with spiced caramel and pineapple, manioc fries and the famous crayfish from Mangatal (a local producer) with old Depaz rum!
