Lentil cultivation was relaunched in the 1990s on the Saint-Flour planèze. Here it is blond, with a firm flesh and a slightly sweet taste. Today it is produced about 70 tons naturally. An association brings together the forty or so producers to ensure promotion and marketing. It is a candidate for the Label Rouge quality label. The best chefs in the region offer it at their tables. It can be found in delicatessens.
