Having recently received a triumphant ovation after being named one of the 50 best restaurants in Latin America, chefs Sebastián Giménez and Mauricio Lopez are on a roll! Their concept? Using fire as the central element of their cuisine. Bolivian ingredients are cooked on the grill over a wood fire or in the clay oven: beef ribs, artichoke hearts, trout and porcini mushrooms roast on the red embers.
